Ingredients

  • 5 – 7 medium sized fresh giant prawns
  • 1 lime
  • 2 red tomatoes each cut into 4 parts
  • 500 ml shrimp stock
  • 750 ml water for boiling shrimp heads and shells
  • Enough cooking oil for frying

Softened seasoning

  • 5 red onions
  • 2 cloves of garlic
  • 2 cm ginger
  • 2 cm turmeric
  • 4 roasted candlenuts
  • 1 tablespoon salt
  • 2 combrang flowers

Other spices

  • 1 turmeric leaf
  • 1 stalk of lemongrass crushed
  • 2 cm of galangal crushed
  • 2 pieces of kandis acid
  • 10 green cayenne peppers
  • Basil leaves to taste
  • Supplementary material
  • Prawn crackers to taste
  • Fried shallots to taste

How to cook prawn curry

After all the ingredients and seasonings above are provided in full, you can immediately practice how to cook the prawn curry recipe using the following steps.

  • First clean all the prawns that have been provided under running water. Remove and set aside the head and shell, but do not throw them away.
  • After that, put the prawns in a bowl, then add lime juice. Stir briefly and let sit for about 10 minutes to get rid of the fishy smell. After 10 minutes, rinse all the shrimp with clean water. Set it aside for now.
  • Meanwhile, boil the head and shell in the prepared water. Boil until it boils and makes broth, then strain the water to use as a cooking ingredient.
  • Next, heat a frying pan and add cooking oil to stir-fry. Once the oil is hot, saute all the ground spices until fragrant.
  • Add all the other prepared spices, except cayenne pepper and basil leaves. Stir evenly until all the spices are wilted.
  • After that, add the prawns and tomatoes, then stir evenly. Cook until the shrimp change color. Then, pour the shrimp stock into the pan.
  • Reduce the heat on the stove and stir gently. After that, add whole green cayenne pepper. Please taste a little of the dish to correct the taste.
  • Before turning off the stove, sprinkle basil leaves to make it more aromatic. Turn off the stove and the dish is ready to be served.
  • Prepare a medium sized bowl for plating, then pour in the cooked prawn curry. Sprinkle with fried shallots to taste and complete with shrimp crackers. Don’t forget to prepare warm white rice when you want to make it a side dish to eat.
