  18. 1 bay leaf

  1. Clean the fish beforehand. Then cut and coat with a solution of tamarind water and salt. Let stand 10 minutes, then drain.
  2. Fry the fish until it turns brown and until cooked. Lift, then set aside.
  3. Heat the oil a little, then sauté the ground spices, kaffir lime, bay leaves, lemon grass and galangal until cooked and fragrant.
  4. Add sugar and coconut milk. Allow it to boil, stir gently until smooth.
  5. Enter the fried fish. Bring to a boil over low heat, then remove.
  6. Add basil leaves, stir again until smooth.
