Ingredient :

  1. 1 whole duck meat
  2. 2 limes
  3. 4 pieces of lime leaves
  4. 2 bay leaves
  5. ½ grated coconut
  6. 1 grain of tamarind dissolved in a little water

  8. Broth powder to taste
  9. Right amount of oil
  10. Boiled water to taste

  1. 10 shallots
  2. 5 cloves of garlic
  3. 10 curly red chilies
  4. 15 red bird’s eye chilies
  5. 3 stalks of lemongrass, crushed and take the white part
  6. 5 hazelnuts
  7. 1 teaspoon ground pepper
  8. ½ tablespoon coriander powder
  9. 2 cm galangal
  10. 2 cm ginger
  11. 2 cm turmeric

How to cook Madura duck with black spices

  2. Clean the duck meat first under running water. Then, cut into 8-10 parts. Bring the water to a boil and boil the duck pieces for about 30 minutes. Lift and drain.
