Ingredients:

  • 4 cups frozen green peas
  • 1 onion, chopped
  • 4 cups low-sodium vegetable broth
  • A handful of fresh mint leaves
  • Salt and pepper to taste

Instructions:

  1. Sauté the onion until soft in a large pot.
  2. Add the peas and vegetable broth; bring to a boil.
  3. Simmer for 10 minutes, then add mint leaves.
  4. Blend until smooth with an immersion blender.
  5. Season with salt and pepper before serving.
