Ingredients:
- 4 cups frozen green peas
- 1 onion, chopped
- 4 cups low-sodium vegetable broth
- A handful of fresh mint leaves
- Salt and pepper to taste
Instructions:
- Sauté the onion until soft in a large pot.
- Add the peas and vegetable broth; bring to a boil.
- Simmer for 10 minutes, then add mint leaves.
- Blend until smooth with an immersion blender.
- Season with salt and pepper before serving.
