Ingredients:
- 1 cup of lentils (any variety)
- 1 can of diced tomatoes
- 4 cups of vegetable broth or water
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
1. In a pot, combine lentils, diced tomatoes, broth (or water), cumin, paprika, salt, and pepper.
2. Bring to a boil and then reduce to a simmer. Cook for about 25-30 minutes or until lentils are tender.
