Ingredients:

  • 4 cups diced carrots
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup low-fat milk or a non-dairy substitute
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté the onion and garlic until golden.
  2. Add the diced carrots and vegetable broth; bring to a boil.
  3. Simmer for 20 minutes until the carrots are tender.
  4. Purée the mixture using an immersion blender until smooth.
  5. Stir in milk and season with salt and pepper.
