Ingredients:
- 4 cups diced carrots
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup low-fat milk or a non-dairy substitute
- Salt and pepper to taste
Instructions:
- In a large pot, sauté the onion and garlic until golden.
- Add the diced carrots and vegetable broth; bring to a boil.
- Simmer for 20 minutes until the carrots are tender.
- Purée the mixture using an immersion blender until smooth.
- Stir in milk and season with salt and pepper.
