Ingredients

  • 750 grams of fresh beef thigh (gandik)
  • 1.5 liters of water
  • 8 lime leaves
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon granulated sugar
  • Right amount of oil
  • The spices are coarsely ground
  • 500 grams of large red chilies
  • 25 red onions
  • 10 cloves of garlic

How to make balado jerky

Once all the ingredients and seasonings above are provided, you can immediately put into practice the balado jerky recipe with the steps for making it as follows.

  • First clean the prepared beef under running water. After that, boil the meat until soft. You can use a pressure cooker, if you have one, to make the process quicker. Once the beef is cooked and soft, remove and set aside.
  • Let it sit for a while so the meat doesn’t get too hot. After that, thinly slice the meat with a thickness of about 0.5 cm in the direction of the grain.
  • After all the meat has been sliced thinly, please pound or bruise the meat so that it becomes flatter, but don’t crush it. You can use wooden or stone mortar. Set it aside for now.
  • Next, heat a frying pan and add quite a lot of cooking oil to fry the flat meat. Make sure the oil is hot, then add the meat slices one by one. Fry until brown on both sides. After that, lift and drain.
  • Still heating the frying pan, but reduce the cooking oil left over from frying the meat to just a little because it’s only for stir-frying. After that, stir-fry all the coarsely ground spices until fragrant.
  • Add lime leaves and stir evenly. After that, season with salt, sugar and ground pepper. Keep stirring until all the spices are mixed.
  • Add lime juice and stir briefly. After that, put all the beef jerky into the pan and stir evenly. Please taste a little of the dish to correct the taste. If it really suits your taste, turn off the stove and the balado jerky dish is ready to be served.
  • Prepare a serving plate for plating, then pour the cooked balado beef jerky on top. Sprinkle with enough fried shallots, if any. If you want to make it as a side dish, don’t forget to prepare warm white rice.
