Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1/2 red onion, finely chopped
- 1 bell pepper, diced
- 1/4 cup parsley, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine chickpeas, red onion, bell pepper, and parsley.
- In a smaller bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the chickpea mixture and stir to combine.
