Ingredients:
- 1 cup cooked rice
- 2 eggs
- 1 cup mixed vegetables (frozen works well)
- 1 tablespoon soy sauce
Instructions:
1. Heat a bit of oil in a pan over medium heat and add mixed vegetables.
2. Once they are hot, push them to one side and scramble the eggs on the other.
3. Mix everything together and add cooked rice and soy sauce; stir-fry until heated through.
