Ingredients:

  • 1 block firm tofu (pressed and cubed)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • Cooked brown rice for serving

Instructions:

  1. Heat sesame oil in a large skillet over medium heat.
  2. Add cubed tofu and cook until golden brown.
  3. Toss in mixed vegetables and continue cooking until veggies are tender.
  4. Add soy sauce and ginger, stirring to combine. Serve over brown rice.
