Ingredients:
- 1 block firm tofu (pressed and cubed)
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- Cooked brown rice for serving
Instructions:
- Heat sesame oil in a large skillet over medium heat.
- Add cubed tofu and cook until golden brown.
- Toss in mixed vegetables and continue cooking until veggies are tender.
- Add soy sauce and ginger, stirring to combine. Serve over brown rice.
