Ingredients:
- 1 cup lentils (rinsed)
- 1 large onion (diced)
- 2 carrots (diced)
- 2 celery stalks (diced)
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions:
- In a large pot, sauté onions, carrots, and celery until softened.
- Stir in lentils, diced tomatoes, vegetable broth, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
