Ingredients:

  • 1 cup lentils (rinsed)
  • 1 large onion (diced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté onions, carrots, and celery until softened.
  2. Stir in lentils, diced tomatoes, vegetable broth, cumin, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
