Ingredients:
- 1 can chickpeas, rinsed and drained- 2 cups fresh spinach- 1 can diced tomatoes- 1 onion, diced- 2 cloves garlic, minced- 1 tablespoon curry powder- Salt and pepper to taste- Cooked brown rice (optional)
Instructions:
1. In a pot, sauté onion and garlic until translucent.2. Add curry powder and cook for 1 minute. 3. Stir in chickpeas and diced tomatoes, simmer for 10 minutes.4. Add fresh spinach and cook until wilted.5. Season with salt and pepper. Serve with brown rice if desired.
