Ingredients:

  • - 1 can chickpeas, rinsed and drained
  • - 2 cups fresh spinach
  • - 1 can diced tomatoes
  • - 1 onion, diced
  • - 2 cloves garlic, minced
  • - 1 tablespoon curry powder
  • - Salt and pepper to taste
  • - Cooked brown rice (optional)

Instructions:

  • 1. In a pot, sauté onion and garlic until translucent.
  • 2. Add curry powder and cook for 1 minute. 3. Stir in chickpeas and diced tomatoes, simmer for 10 minutes.
  • 4. Add fresh spinach and cook until wilted.
  • 5. Season with salt and pepper. Serve with brown rice if desired.
