Ingredients:
- 2 cups diced zucchini
- 1 cup cooked, shredded chicken
- 1 onion, chopped
- 4 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
- In a large pot, sauté the onion until translucent.
- Add the diced zucchini and cook for a few minutes until softened.
- Pour in the chicken broth, add the shredded chicken, and thyme; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Season with salt and pepper, then serve.
