Ingredients:

  • 2 cups diced zucchini
  • 1 cup cooked, shredded chicken
  • 1 onion, chopped
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté the onion until translucent.
  2. Add the diced zucchini and cook for a few minutes until softened.
  3. Pour in the chicken broth, add the shredded chicken, and thyme; bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Season with salt and pepper, then serve.
