Ingredients
- 1 cup quinoa
- 1 can black beans, rinsed
- 1 cup corn (canned or dried)
- 1 cup diced bell peppers
- Juice of 1 lime
- Salt and pepper to taste
- Chopped cilantro (optional)Instructions
1. Rinse quinoa and cook according to package instructions.
2. In a large bowl, mix cooked quinoa, black beans, corn, and diced bell peppers.
3. Drizzle with lime juice, and season with salt and pepper.
4. Toss well and serve at room temperature; garnish with chopped cilantro if desired.
