Ingredients
- 1 can coconut milk
- 1 can chickpeas, rinsed
- 2 cups diced sweet potatoes (can use dried or fresh)
- 2 tsp curry powder
- Salt to taste
- Fresh cilantro (for garnish)Instructions
1. In a pot, combine coconut milk, chickpeas, diced sweet potatoes, curry powder, and salt.
2. Simmer on low heat until the sweet potatoes are cooked through and soft.
3. Serve hot, garnished with fresh cilantro.
