Ingredients:
- 2 cups of leftover rice
- 1 cup shrimp, peeled and deveined
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon green onions, chopped
Instructions:
1. In a large skillet, scramble the beaten eggs and set aside.
2. Heat oil in the same skillet, add shrimp, and cook until pink.
3. Add leftover rice and soy sauce; stir-fry for 5 minutes.
4. Stir in scrambled eggs and green onions. Mix well and serve.
